Breakfast food – as Parks & Recreations series knows oh too well – is the best kind of food. Given my obsession with it, it is, I agree, shocking that I haven’t tried all that much to write more about how to make it. As the entire website is going through a revival period, it’s perhaps time to resuscitate the recipes section as well.
I am not a morning person - which means breakfast for me is associated more with a sprint than one of those wonderful pictures you see on instagram of dozen of dishes, freshly baked croissants and the lot. The moment I wake up I have very little time to get out of the house, so finding dishes I can prepare beforehand is essential for me. Overnight oats are delicious, nutritious, easy to make and ready to eat as soon as I wake up.
With inspirations from garlic naans to the basic pork belly, this is a recipe that is versatile yet filling and full of flavour. Besides, who doesn't like eating with their hands?
The chilli peanut butter chicken works best with rice and it's a good recipe for bulking up as well: peanut butter is high in natural fats and calories. It's also incredibly easy to make, and, if you are put off by some more exotic ingredients on the list (which might not be easy to find outside the UK), feel free to simplify it.
