Here we go for some Jubilee madness!
Made some amazing chicken earlier on that day:
But we know this is not the real reason y’all clicked on my site.
The base a simple sponge cake (100 g butter, 175g caster sugar, 4 eggs, 2 tsp baking powder, 175g self-raising flour, 125ml full fat Greek yogurt).
Bake it for about 25 min, then leave it to cool down. Once it’s cold, mix 175g butter with 350g icing sugar and voila you have a topping. Decorate the topping with berries. (you can probably get a lot of other shapes on top of the cake).
